New research cited from Jo Robinson's "Why Grassfed is Best!" shows that milk from cows raised on grass is unusually rich in a number of nutrients, including vitamin E and beta carotene plus two kinds of good fat--CLA (Conjugated linoleic acid) and omega 3 fatty acids. 

When grazing animals are raised on their natural diet of grass instead of grain, their products are lower in bad fat and calories, but higher in the crucial good fats our bodies need.  These nutrients have been linked with a lower risk of cancer, heart disease, obesity, diabetes, and immune disorders.  Omega 3 levels are as much as 3 times higher in pasture fed cows; CLA levels may be as much as 5 times higher.  When our cows' milk was tested for these nutrients, the findings held true to what was expected.  What is more, the animals are healthier and less stressed, and they are more beneficial to the environment (as is the "permanent green" of the pastures).

Dr. Tilak Dhiman from Utah State University estimates that you should be able to lower your risk of cancer simply by eating:  1 oz. of cheese and 1 glass of whole milk from grass-fed cows, plus 1 serving of grass-fed meat each day.
